Rice Khir (Payasam) by Gowri Chebbi
Ingredients:
1. 2 cups of cooked rice
2. 1 can of evaporated milk
3. 1 can of sweetened condensed milk
4. 1 pint of heavy whipping cream
5. ½ liter of half-and-half milk
6. 10 to 12 raisins
7. 8 to 10 cashew nuts
8. 6 to 8 pistachios
9. 6 to 4 sliced almonds
10. 3 pinches of saffron
11. 4 cardamom pods
12. 2 tablespoons of ghee
13. ½ cup of sugar (optional, for added sweetness)
Method:
1. In a large pan, combine half-and-half milk, heavy whipping cream, condensed milk, evaporated milk, and saffron.
2. Bring the mixture to a boil and simmer for 4 to 5 minutes. Then, add the cooked rice to the pan.
3. In a separate pan, season ghee with all the nuts and raisins.
4. Pour the nut and raisin mixture over the khir and add crushed cardamom pods.
5. Serve the Rice Khir hot or cold.
